The carotenoid beta-carotene gives carrots and other yellow/orange fruits and vegetables their color. Studies suggest that diets rich in carotenoids may reduce the risk of cardiovascular disease and some cancers. Oranges and other citrus fruits are excellent sources of the antioxidant vitamin C.
